Gum Acacia vs Other Hydrocolloids

Compared to guar gum or xanthan gum, Gum Acacia shows very low viscosity at high solids, excellent flavor fixative properties and strong emulsification for beverage applications. Where guar/xanthan mainly build viscosity, acacia gum is preferred when you need clarity, stable emulsions and a light mouthfeel.
